We have developed a system to make your pan cleaning and coating experience simple and easy. All you need to do is contact your nearest Pan-Glo location and let them know what pans need to be cleaned and recoated, when the pans will be ready to pick up, and when they will need to be back in the bakery. It's that simple.
Because commercial bakeries make many different kinds of products, most bakeries have several types of pans. And, to meet their customer's requirements, the baker may need thousands of each type of pan to fill these requirements.
Pan-Glo's process was designed to accommodate these large quantities of pans.
Once an order has been scheduled with a facility. A tractor-trailer is dispatched to pick up the set of pans. Once the driver arrives at the bakery, the Pan-Glo driver loads his own truck and takes the set of pans to the cleaning facility.
The incoming pans are first sorted and cleaned by utilizing alkaline chemicals which remove the greases, carbons, baking residues, and all other soils as well as any residual coating from the pans. Once these materials have been removed, the pans are rinsed and sanitized in a chlorine solution. This destroys any remaining organic materials including harmful bacteria that may still be present. Next, the pans are automatically rinsed a second time with high-pressure water to remove any remaining foreign matter. After the pans have been cleaned, the pans are dried in ovens at 425 degrees F.
When completely dry, the pans are coated with Americoat silicone release coating. Americoat is the highest performing silicone release coating used in the baking industry today. Specifically developed for Pan-Glo/Pan-Glo Services/ and Pan-Glo America, Americoat will give hundreds of continuous releases without the need for oils, greases, paperliners, or any additional release products.
Americoat is applied to the pans and baked on at 425 degrees Fahrenheit, forming a hard, slick surface on which to bake. Americoat also helps keeps pans clean since residues don't normally stick and if by chance they do, they can be easily wiped clean with a soft cloth.
Cleaned and re-coated pans are made ready for the return trip to the bakery. The time required to clean and recoat a set of bakery pans is usually between 24 and 36 hours.
